This document compiles the principles and methods that the World Health Organization and the Food and Agriculture Organization--both agencies of the United Nations--use to asses the environmental and human health of chemicals put in food. One purpose is to allow scientists to evaluate the evaluation of the agencies; another is to allow scientists to conduct research that can be compared with that of the agencies. Among the topics are risk assessment and its role in risk analysis, toxicological and human studies, dose-response assessment and derivation of health-based guidance values, the dietary exposure assessment of chemicals in foods, risk characterization, maximum residue limits for pesticide and veterinary drugs, and principles related to specific groups of substances.
